Tilapia Fries

These are so yummy! They're kind of like fish sticks, chicken fingers - but they're pure 100% tilapia. Tilapia is an excellent fish to have. It has a great source of protein and healthy fats. Your waist will thank you!


Tilapia Fries

16 oz. package of frozen tilapia
2 eggs
1 c. of whole flour
1 c. bread crumbs - mixed with 1/2 tsp. salt, 1 tbsp. paprika, 1 tbsp. french fry salt
oil

1. use a SHARP cutco knife to slice the tilapia pieces
2. coat each piece with the flour
3. coat it with the egg
4. then cover it with the bread crumb mixture
5. put onto a baking sheet
6. heat oil - add each fry into in and allow it to bubble for 4 minutes.
Remove

Enjoy!

Condiments - mayo, sour cream, ketchup, tartar sauce, vinegar

Spring Fling Salmon

This is an amazing, light and healthy salmon. It's perfect for spring time. You're mouth will love, your stomach will love it and best....your waist will love it too!!

Spring Fling Salmon
4 pieces of salmon
1 mango
2 tbsp. cilantro
1 small purple onion
1 small red pepper
1 tbsp. lime juice
1 tbsp. honey mixed with 1 tsp. brown sugar

1. wash the salmon
2. marinate it in a honey & brown sugar between 30 minutes to 2 hours (ideally 1 hour)
3. chop the mango, cilantro, onion, red pepper and mix it with lime - set aside
4. grill the salmon and then remove - serve it with the mango salsa

It's best when served over a bed of rice of noodles.

Broiled Flounder with Creamy Lemon Sauce and Steamed Asparagus

So this is maybe one of my healthiest and most nutritious meals yet. I promise that you'll love it. It's good for weight loss, maintaining a healthy weight and just being overall a healthy person. It's all pretty kid friendly - considering what it is.

Broiled Flounder with Creamy Lemon Sauce 
1 package of frozen flounder (the kind I buy normally has 6 pieces in it)
1/4 cup of melted butter
1 tbsp lemon juice
1 glove of minced garlic
1 tsp. of Worcestershire sauce
salt/pepper to taste

1. bake DEFROSTED flounder in the broiler for 15 minutes
Meanwhile, melt butter in warm pan and add the lemon. garlic and Worcestershire sauce
2. While the fish is still hot pour the sauce over the fish and then sprinkle with your salt and pepper blend

Asparagus
1 pound of asparagus (clean)
olive oil
Parmesan cheese
Onion Salt
Garlic Powder

1. Preheat oven to 450
2. sprinkle olive oil on top of asparagus and mix so it's coated well.
3. sprinkle 1/4 tsp of garlic powder and 1/2 tsp. onion powder (mixed together) on asparagus and pour about 1/4 cup of Parmesan cheese on top
4. Bake for 25 minutes

Serve both w/ a glass of your favorite red wine and some garlic bread. Yummy!!!

Salmon Puff Pastry Rolls

This is a wonderfully light and healthy recipe perfect for lunch or an appetizer. It can be made the day before you are eating it or the day of. It can be served warm or cold. Basically it's a perfect recipe for any occasion, meal, time of day and mood you are in - especially if you are in a healthy one!

Salmon Puff Pastry Rolls
1 box of puff pastry sheets
4 cans of 4 oz. canned salmon
2 tbsp. of light mayo
a dash of paprika, onion powder and pepper
1 egg
sesame seeds

Cucumber Cream Sauce
1/2 cup of sour cream
3 tbsp. of white vinegar
1 tbsp. sugar
2 large cucumbers - peeled and thinly sliced
1 tbsp. of onion powder


1. mix sour cream, white vinegar, sugar, onion powder together - add in thinly sliced cucumbers and cover and place in fridge overnight

Salmon Puff Pastry Rolls

Preheat oven to 350

1. flatten out two puff pastry sheets
2. rub some olive oil on it
3. mix can salmon with mayo and seasonings
4. evenly distribute salmon on puff pastry sheets - then roll it
5. beat egg and brush it over roll and sprinkle sesame seeds
6. place in oven for 35 minutes at 350

remove - allow it to cool enough for you to slice.

Serve with cucumber cream sauce - to serve use slotted spoon so you don't get the cucumber slices, just the taste!

Fish Tacos

This recipe may seem daunting and hard but I promise you that if you just take a deep breath and relax and focus on the task at hand you will find that it is actually very, very easy.

Fish Tacos
1 package of frozen fish fillets (I recommend tilapia) - defrost
flour
2 eggs lightly beaten
1 tbps. of melted butter
whole wheat bread crumbs mixed with parmesan cheese, chili powder, paprika and onion powder
lettuce
slices of tomatoes cut into fourths
slices of purple onion
shredded cheddar and mozzarella mixture (Mexican Blend)

Melt butter on frying pan
1. Pat the fish in the flour well.
2. then dip each piece of fish into the egg and make sure the whole piece is covered in egg
3. coat it with the bread crumb and spice mixture
4. place fish into pan and fry each side for 3-4 minutes

Repeat until all fish is done.

Place the fish on a paper towel.

Place your hard tacos on a plate. Then put the fish, about 5 of the fourths in each taco, a few slices of lettuce, purple onion and about palm size of cheese. Then put a dollop of any condiment you'd like.
(Ranch, Thousand Island, French, Sour Cream, Mayo)

Serve!

Baked (Fake) Shrimp with a Vodka Cream Sauce

So one thing about me is I hate "extra stuff" in the house. I always feel the need to purge the kitchen of everything, which may sound strange to a foodie like myself. So I was looking in the cabinet and feeling bad that I had requested my parents buy vodka for my Penne Al A Vodka and I didn't use the whole bottle - my, my! LOL So, I therefore decided to create a new vodka recipe. Luckily, we also had some lonely sour cream in the house which I had used for Baked Salmon w. Cream Sauce recipe. So here is my elegant and delicious shrimp recipe.

Baked (Fake) Shrimp with Vodka Cream Sauce

1 package of Dyna-Sea shrimp - defrosted
1/2 cup of sour cream
2 gloves of garlic
1/2 onion
1/2 cup of vodka
olive oil
1 medium tomato

Place shrimp in baking dish and preheat oven to 375
1. crush the garlic and dice the onion and saute it in the olive oil
2. then add in the cream and vodka and stir over medium flame until you feel it is mixed in well
3. pour over the shrimp and bake for 10 minutes
4. dice the tomatoes - after 10 minutes add the tomatoes and then place back in oven for another 5-10 minutes

Serve Immediately!

Asian Baked Salmon with Peppers

This recipe is very simple. It's also super tasty. I made this for my parents and then they made it again for a dinner party. It was  huge hit.

Asian Baked Salmon with Peppers
2 pieces of 6 oz. fillets
3 tbsp. sugars
1/3 c. soy sauce
1/4 c.of sesame oil
Sesame Seeds
1 small yellow pepper
1 small red pepper
1 small orange pepper
Ken's Italian Dressing (for peppers)

1. mix the sugar, soy soy sauce and sesame oil together - allow it to marinate in the fish for at least 30 minutes - ideally an hour, no more. Leave some of marinate in the mixing bowl for later
2. preheat oven to 325. remove the fish and pour a few tbsp. of the mixture over the fish and cook for 25 minutes
3. Once it is done - take the fish out of the oven and drizzle some remaining marinate over it and sprinkle sesame seeds over it as well. Place back in the oven for 5-10 minutes before serving. Make sure the oven is off though - it will remain hot even though your turned it off.

Dice the peppers small and mix in dressing to create a pepper salad. Serve w/ salmon! Delicious!

Parmesan Fried Tilapia

So normally when I make these fried dishes I use bread crumbs, but it got me thinking why use bread crumbs? They're more filling and they add extra unwanted calories. Don't get me wrong, I still think there is a time and place for bread crumbs (when making patties, you MUST use them). But if you plan to fry something - skip the bread crumbs and make your own delicious mixture.

Parmesan Fried Tilapia
1 package of tilapia (normally there are about 5-6 thin pieces of it)
1 egg
handful of whole wheat flour
3 tbsp. Parmesan cheese
I mix cumin, paprika, garlic, onion, oregano all together - but you can make your own.
Oil - for frying

1. wash the fish and then coat it with the flour
2. drain in in the egg
3. then evenly coat the fish with your mixture
4. fry it for about 6 minutes on each side

Serve!!

Mexican Baked Salmon

So I was very bored. As I am a lot of the time when I create new recipes. This one I was just thinking what can I marinate the fish it that I haven't done before. I looked in the cabinet and saw ketchup and said "hmmm this could work" And well the rest is history and in my dad's stomach! He and my mom loved this recipe. My mom was so shocked and impressed with the stuff I come up with.

Enjoy!


Mexican Baked Salmon

1 tbsp. chili powder
2 tbsp. honey
2 tbsp. ketchup
2 minced garlic cloves
Squirt of lemon
1 tbsp. soy sauce
1 tsp. veg oil


Mix all ingredients together.  
Marinate for 2 hours


Bake for 30 minutes at 350

This is excellent when served with a salad and a side or orzo or couscous. Add some spicy spices to really enhance the taste.

Garlic Baked Salmon

So this recipe was inspired by the website SixSisterStuff which I found through the blog mixandmatch.blogspot.com. I changed it a little so if you want my version don't go to Six Sister Stuff - their's is different. I made it tonight for my mom and dad and they loved it. My dad kept reaching over and taking my mom's. My mom, being the sweet woman that she is let him but said to me "you better make this again for me". This recipe is super healthy and so easy. I promise you that you're going to LOVE LOVE it!

Garlic Bake Salmon
2 3 oz. pieces of salmon
3 large cloves of garlic
garlic salt
2 tbsp. olive oil
1/4 tsp. dry basil
1 tbsp. butter

1. crush the garlic
2. place in olive oil- add the garlic salt and dry basil
3. heat it in the oil for about 2 minutes
4. place salmon and garlic basil oil marinate in a bag or container and marinate for 1-2 hours.
5. preheat oven to 350
6. melt the butter in a pan and add a little more garlic and salt and pour over the salmon along with marinate
7. bake for 30 minutes

Serve! (best serve with a garden salad and some chips or crackers on the side- or at least that is how I served it)

It's that easy! It's that good! It's that perfect!! YUM!

Strawberry Glazed Salmon and Spring Salad

This is one of my favorite recipes. It has summer written all over it. It's so light, so healthy and so fun. I promise you are going to beyond love it. I made it from my mother and father and they raved about it. They couldn't get enough of it. If you're family doesn't like it, I promise you a full refund - LOL...Get ready for your mouth to go crazy for goodness.

Strawberry Glazed Salmon and Spring Salad
Salad:
1 package of spring mix salad
1 can of mandarin oranges
handful of dried cranberries

Salad Dressing:
2 tbsp. vegetable oil
3 tbsp. balsamic vinegar
1/4 tsp. lemon
2 tbsp. sugar


Strawberry Glazed Salmon
3 - 3 oz. salmon fillets
1/2 cup strawberry preserves
2 tbsp. Dijon mustard
squirt of lemon
dash of onion salt
1/4 c. soy sauce

1. Mix the glaze together
2. clean the fish and allow it to marinate for 30-60 minutes
3. preheat oven to 350 and bake for 30 minutes
(while it is cooking)
4. put the oranges and dried cranberries on top of the salad
5. then mix it with the dressing

Serve Salmon and Salad on a plate and Enjoy!!

Salmon Zucchini Cakes


I came up with this recipe when I was trying to figure out a creative way to make my ever famous salmon patties which my mother adores yet my father just likes. My goal is to always make a hit- something that will leave my customers wanting more of whatever it was that I served. So when I thought about adding the zucchini into - it seemed perfect. It adds a little more taste to it and it is super (!!) healthy. And for those of you that don't like zucchini you can either just put less in or skip it...But I think yo should try it.


Salmon Zucchini Cakes

2 6 oz. canned salmon
1/2 cup of shredded zucchini
1/8 tsp. of onion powder
1/8 tsp. of salt
1/8 tsp. of dry mustard
2 eggs
1/2 cup of whole wheat bread crumbs
1 tbsp. of low fat mayo

1. shred the zucchini
2. drain and mash the canned salmon and then add in the zucchini, onion powder, salt, dry mustard and mayo and mix well.
3. add in 2 eggs and the bread crumbs
4. spray a pan with Pam cooking oil and allow it to heat for 2 minutes
5. form the paste into mini pancakes and place on pan and cook for on medium heat for about 5 minutes on each side- flipping it periodically
6. serve with ketchup, mustard, sour cream or whatever your heart's desire!


Fresh Baked Salmon with Lemon Sauce and Salad


This was a huge hit at my house and I know it will be the same at yours!

Fresh Baked Salmon with Lemon Sauce and Salad

4 oz. salmon fillets
4 tbsp. of lemon juice
1/4 tsp. black pepper
1/4 tsp. garlic salt powder
1/2 tbsp. of olive oil
1 c. seasoned bread crumbs

1. mix the lemon juice, black pepper, olive oil and garlic salt powder together
2. drizzle over the salmon and coat well- Allow it to marinate over night
3. preheat oven to 350
4.  coat the salmon in egg and then place into a baking dish
5. pour bread crumbs over salmon making sure it is fully covered
6. bake for 30 minutes
7. pour your favorite Fresh Express salad mixture into bowl along with your favorite dressing - serve with baked fish on the side..Enjoy!!

Italian Baked Flounder and Spring Mix Salad

First off- I need say how sorry I am for not posting in a while. I've been busy outside the kitchen..but now it is time to get busy inside the kitchen. This recipe I am going to share is very easy and very (very) healthy.
A few simple ingrediants we all have plus 1 special one. And I promise when you are doing you will wish you had made more.

Italian Baked Flounder and Spring Mix Salad 

3 pounds of fresh or frozen flounder- If it is frozen make sure you deforst it. It takes about 8 hours to defrost
1 tsp. of oregano
4 tbsp. olive oil
1 tbsp. of red wine vinegar
1/2 tsp. of salt
1 bag of Fresh Express 50/50 Spring Mix

1. preheat your oven to 350
2. clean the frozen and then drizzle 2 tbsp. of olive oil over it and 1 tsp. of dried oregano
3. bake in oven for 15-20 minutes
4. pour the reminaing 2 tbsp. of olive oil and red wine vinegar over the salad and then add the salt - serve it with the flounder on the side.

Salmon Kabobs (4th of July Post 4)

Okay so on the 4th of July, you will have people that chose not to eat meat so you need to have an alternate options- these grilled salmon kabobs are sure to please them (and everyone else at the party!) They're healthy, low calories, low in fat and absolutely guilt free!!

Salmon Kabobs
16 oz. (1 lb) of salmon fillet
2 cups of pineapple cut into cubes
2 cups of any getable

Salmon Marinate 
2 tbsp. of fresh parsley
2 cloves of garlic minced
2 tbsp. Heinz no high fructose corn syrup ketchup
2 tbsp. of brown sugar
1 tsp. of salt
1/2 tsp. of cayenne pepper

Pineapple Marinate
2 tbsp. brown sugar
1/4 cup of soy sauce

1. combine all all ingredients together (not the vegetable of your choice, pineapple and salmon)
2. clean the salmon and then add in to the marinate and make sure the marinate covers all the salmon fillets - then place in resealable freezer bag and place in fridge for at least 30 minutes (preferably an hour or two)
3. preheat the oven to 450* and cook salmon for 5 minutes- then take out and allow it to cool
4. while the salmon is cooking, boil some water and steam the vegetable until firm but tender (about 5 minutes)
5.enough to touch (15 minutes) cut the salmon into cubes and
6. while the salmon is cooling - cut the pineapple into chunks and coat them in the pineapple marinate
then carefully place them on the skewers alternating it with the pineapple chunks and the vegetable chunks
6. return to oven (bring the oven temperate down to 325* and cook for 15 additional minutes
7. take out and allow it cool for 5 minutes or 45 minutes- it can be made that much before but it taste best if served sooner.

Place them on a plate and serve up!

Wrap Party

Lunch time? What do you normally have? A sandwich? A salad? Soup? Too busy to eat anything? I feel you. Well a perfect change is a wrap. I know most of the time when people think of a wrap they think it's heavy and filling. They might associate with a lot calories since the wraps you get at a restaurant or the ones you may see at a party have about 220 calories and 45 grams of carbohydrates - and this is just in the wraps, then you have to think of all the fillings. Well my wraps are far from that. Here are four different wrap recipes- all of which you and anyone at your wrap party will love, love, love, love!!

You will always use Xtreme Wellness Wraps
(I like the tomato basil but they have spinach and regular as well)

Turkey and Pastrami Wrap
4 Xtreme Wellness Wraps
1 package of smoked fat free turkey deli
1 package of pastrami deli (cut off the fat trimmings)
1 large tomato
7 slices of lettuce
3 tbsp. of Helman's olive oil light mayo
2 1/2 tbsp. ketchup (Heinz without high  fructose corn syrup)

1. lay each wrap out on a plate
2. for each wrap take 4 slices of turkey and 4 slices of pastrami. fold them loosely and lay them on top of the other.
3. then cut the tomatoes in thin strips- place 6 slices on each wrap and then cut the lettuce into medium sized pieces and lay them on top.
4. mix the may and ketchup together and then scoop two scoops on each wrap- spreading it somewhat evenly.
5. then tightly roll the wraps. cut it diagonally
Serve and Enjoy!! 
 
Tuna Wraps
4 Xtreme Wellness Wraps
3 5oz cans of tuna (drained in water)
3 tbsp. of Helman's olive oil light mayo 
1 tomato 
7 slices of lettuce

1. lay each wrap on a plate
2. for each wrap put about 2 scoops of tuna
3. lay 2 slices of lettuce and 2 slices of tomato on each
4. then tightly roll the wraps and cut diagnoly

Light and Healthy Salmon and Fresh Spinach

This recipe was a huge hit at my house yesterday. At first I was just going to do the salmon and then regular salad on the side, but then I thought - how boring?! I came up with this when I was coming home from work and just knew it would be a hit. It is so healthy and so delicious- so light and perfect if you're trying to eat healthier.

Light and Healthy Salmon and Fresh Spinach
2 salmon fillets
lemon juice (about the amount of lemon juice from 1 lemon)
seasonal salt
dry or fresh parsley
4 tbsp. dried cranberries
2 cups of fresh spinach leaves

Dressing
1/2 tbsp. salt
1/8 cup of white sugar + 1 tsp.
3/8 cup of vegetable or canola oil
3 tbsp. of balsamic vinegar

1. preheat oven to 350
2. poke the salmon with a fork
3. drizzle the lemon juice over the salmon
4. sprinkle the seasonal salt over the salmon (about 1/2 tsp)
5. then sprinkle the the parsley over the salmon (1/4 tsp.)
6. bake for for 25-30 minutes

7. Put 1 cup of spinach into each bowl
8. cut up each the salmon into large bite sizes and place ontop of spinach
9 put 2 tbsp. dried cranberries in each bowl
10. mix the dressing ingrediants together
11. pour over and serve immediately! (the salmon should be hot when you serve it for best tastes)

Honey Mustard Salmon

 So my dad was away and normally (well actually all the time) we have chicken on Friday nights, since my dad wants to have chicken on Fridays. But since he was away on business for a few weeks I decided to make something different, my mom after all isn't picky about what she eats and doesn't eat. This is when I discovered this recipe. Yes I know many of you have heard of it before, but mine is the best. I've been told it tastes like it is from a restaurant! And even my mom's friend who doesn't like fish tried it and liked it. So I promise you that if you love fish- you will love this! And even if you don't like fish- you will love this..well maybe not love but you will definitely like it a lot!!

Honey Mustard Salmon

2 fish fillets (that is 4oz of salmon)
2 tbsp. honey
2 tbsp. Dijon mustard
2 tsp. light sodium soy sauce
1/2 tsp. brown sugar
1 tbsp. vegetable oil
1/2 tsp. lemon juice

1. rinse the salmon
2. mix the honey, Dijon, soy sauce, brown sugar, oil and lemon juice together
3. put the salmon and dressing into a large baggy and marinate in fridge for 20-30 minutes
4. preheat oven to 325* and bake for 30 minutes

you can serve this warm or cold- but cold is better!

Shrimp Scampi Bake

So I don't eat shrimp or any kind of shell fish for that matter but I still like to cook with it - or kind of. I use the fake shrimp. I understand it might not be as good as the real kind but it's better than nothing and most people have told me that they cannot tell the difference.

Shrimp Scampi Bake

1/2 cup of butter- melted
2 tbsp. prepared Dijon mustard
1 tbsp. lemon juice
1 tbsp. chopped fresh garlic
1 tbsp. chopped fresh parsley
2 pounds of medium cooked imitation shrimp

1. I a medium saucepan combine the butter, Dijon mustard, lemon juice, garlic and parsley. Once the butter
melts completely, remove from heat
2. Preheat oven to 400*
3. Arrange shrimp in shallow baking dish and pour the mixture over it.
4. Bake in oven for 10 minutes.
5. Garnish it with parsley and serve!!
