Sleepy Time Cookies

If you're ever having a hard time falling asleep...make these and you'll warm right up and feel ready for bed. Just make sure you brush your teeth before falling asleep.











Sleepy Time Cookies
1 stick of softened butter
2 eggs
2 1/2 cups of whole wheat flour
1 cup of white sugar
1/4 cup of light brown sugar
1/2 tsp. salt
1 1/4 tsp. baking soda
1 tsp. vanilla

1. mix the softened butter with 2 eggs
2. slowly add the white sugar and stir
3. add the flour and brown sugar and mix well and hard
4. add in the salt, vanilla and baking soda
5. cover with saran wrap and place in fridge between 30 minutes to 2 hours

Preheat over to 425
Use an ice cream scoop spoon to form the cookie dough - use a fork the push down

Bake for 20 minutes - remove and allow to cool

Brew 1/2 cup of sleep time tea - (allow it to cool just a little bit - maybe 5 minutes)
Add in 2 cups of confectionery sugar and stir until smooth

Add the frosting onto each cookie.
Place in fridge for at least 4 hours to allow it to harden

Serve and Enjoy!

Ginger Snap Cookies

These are 'OMG melt in our mouth delicious, so delicious cookies'. I know you are going to devour these and then be so mad because there aren't left! Most cookies can be very unhealthy, but if you follow my recipe they will be healthy and so, so good!

Ginger Snap Cookies
1/2 c. apple sauce
1/2 c. white sugar
1 mashed banana
1 egg
2 cups. of whole wheat flour
2 tsp. baking soda
1 tsp. cinnamon
1 tbsp. ground ginger
3/4 c. brown sugar

1. mash the banana and then add it to the apple sauce - mix well
2. add in the egg
3. mix together the flour, baking soda, brown sugar, white sugar and cinnamon
4. mix your flour mixture with the apple sauce mixture and then add in your ginger
5. cover and place in fridge for at least 1 hour (no more than 4)

Preheat over to 375

Make small balls and place on baking sheet and then use a fork to push down on balls.

Sprinkle with colored sugar if you must for a holiday feel.

Bake for 18 minutes

Cheesecake Cookies

Cheesecake cookies are so delicious and so simple, I promise you that when you're done making these you will ask yourself why you have never made them before. Here is the simple and healthful recipe...

Cheesecake Cookies
1 package of cinnamon graham crackers
1 package of regular cream cheese
dash of milk
2 tbsp. of sugar
chocolate syrup
crushed Reese's peanut butter cups

1. soften the cream cheese - then add dash of milk and sugar.- Whip it really good!!
2. spread evenly on the graham crackers.The crush the Reese's peanut butter cups and sprinkle over the graham cracker and cream cheese layer - put in freezer for at least 4 hours (or overnight)
3. remove graham cracker and cream cheese and pour in zig zag form the chocolate syrup. Place in fridge for a few hours so it can harden. Serve! YUMMY!!!

Just like regular old time smores - this recipe is the same! First you spread the nutella on the graham crackers, then you melt roast the marshmallows and then you stick it on the graham crackers.

Easter Dessert: Cookies


Easter Cookies
1 stick of butter
3/4 Cup firmly packed brown sugar
1/2 Cup granulated sugar
1 Egg(s)
1 tsp vanilla
1 1/2 Cups all-purpose flour
1 Teaspoon Baking Soda
1 Teaspoon ground cinnamon
dash of salt
3 cups of quick oats - dry
1 cup of Easter M and Ms

Heat oven to 375°F.
1. In large bowl, beat margarine and sugars until creamy. 
2. Add egg and vanilla; beat well.
3.  Add combined flour, baking soda, cinnamon and salt mix well. Add oats; mix well. 
4. add in M and Ms;
Drop dough by rounded tablespoonfuls onto greased cookie sheets. 
5. Bake 18 minutes. Let cool

Healthy Style Peanut Butter Cookies

Peanut butter can either be a super healthy snack or a super unhealthy snack. It all depends on what brand and type of peanut butter you buy. Stay away from any peanut butter that has more than 2 ingredients. The only ingredients that should be in your peanut butter is PEANUTS and SALT. If there is ANYTHING else - STAY AWAY! I am sadly allergic to peanuts but I wasn't always. I developed is annoying allergy when I was in my early 20's. Yet, I can still say these peanut butter cookies are the best in the world...and very healthy!!

Healthy Style Peanut Butter Cookies
1 cup of softened butter
1 cup of 100% All Natural Peanut Butter
1 cup of All Natural Apple Sauce
1 cup of brown sugar
1 large egg
1 cup of whole wheat flour
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking soda

Put all ingredients into a bowl and mix well with an electric mixture (or by hand).

Grease a pan. Use an ice cream scooper to scoop out the dough and place down on greased pan. Then use a fork to push down on the scoops of dough.

Bake in oven at 400 for 15 minutes.

Serve and Enjoy!

Apple Oat Cookies

So these are cookies that are just like my traditional oatmeal cookies but I slightly adjusted some of the ingredients and added in apples. I know you will love them as much as my peops did!

Apple Oat Cookies
2 eggs
1 1/4 cup flour
1/2 cup white sugar
3/4 cup of light brown sugar
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 cup of melted butter
2 cups of quick oats
2 cups of apples - peeled and sliced and chopped in to small chunks

1. mix the flour, sugar (both brown and white), cinnamon, baking powder, salt and oats together
2. then add in the eggs and butter
3. add the chunks of the apples and mix well
4. place a spoon full of the cookie dough onto a baking dish
5. bake for 20 minutes  - let cool for 20 minutes

Pumpkin Ice Cream Cookies

It's almost fall! I love fall. I love the smell of freshly sharpened pencils. I love the smell of a new notebook. I love new folders and I love how everything is starting fresh. I love when the leaves change colors. I love Thanksgiving. I love Halloween - I love seeing all the cute kids in their adorable costumes. And if you're team is in playoffs - fall is a great time of year. Go Braves!! And when I was a kid and used to watch all those teenage shows, I loved the season premiers after a summer of re-runs. You see fall is a really fun time of year. Don't you think? In honor of fall I thought I would post a yummy fall dish - that still has a speck of summer in it.

Saying goodbye to summer and hello fall...Labor Day Weekend Special!

So fall is all about pumpkins! And summer is all about ice cream. So why not combine the two?!!

Pumpkin Ice Cream Cookies
1/2 cup of brown sugar
1/2 cup of white sugar
1 cup of pumpkin puree
1 egg
1 cup of oatmeal
1 cup of whole wheat flour
1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 cup of raisins
1/2 cup of melted butter
Ben and Jerry's Vanilla Caramel Frozen Yogurt

1. Mix your dry ingredients together: flour, sugars, oatmeal, cinnamon, baking soda and salt
2. Then mix in your wet ingredients: egg, butter and pumpkin and raisins
3. Cover and place in fridge for 1 hour
4. Preheat oven to 375 - form cookie dough into round 3 inch cookies and bake for 20 minutes - let cool. During this time you should take out your frozen yogurt and allow it to soften. Once they're easy to handle and the ice cream is softened put a scoop on a cookie and then take another cookie and place on top.
5. Wrap each sandwich in saran wrap and place in freezer for at least 3 hours.

When you're ready for eat it take it out and Enjoy a delicious fall/summer treat- guilt free!

Real Carrot Cookies

"Real Carrot Cookies" are an excellent choice for someone who wants something sweet but still get some health benefits along the way. I made this for my mom's birthday and both and she and my dad loved, loved, loved it. They thought it was incredible! They raved and raved about it that night and then a few days later. To quote my dad "the best cookies he's ever had" and let me tell you in his 62 years on earth he has his fair share of cookies. I promise that you will love these and so will everyone else that you make them for. Enjoy!

Real Carrot Cookies
6 tbsp. melted butter
1/2 cup of white sugar
1/2 cup of light brown sugar
2 eggs
1 cup flour
dash of salt
1/2 cup of quick or old fashioned oats
2 cups shredded carrots
1 tsp. cinnamon
1/2 tsp. baking powder
3/4 tsp. baking soda
your favorite frosting

Preheat oven to 350
1. mix the flour, sugar, cinnamon, salt and baking powder together
2. add in the eggs and melted butter and mix well
3. then add in the grated carrots
4. bake in oven for 25 minutes
5. let cool for 15 minutes before serving

Serve with your favorite frosting

So Healthy Oatmeal Cookies

So for my birthday this year (May 26) and I knew I had to have something sweet, after all it was my birthday. But I needed something that was treat like yet still healthie foodie worthy and I came up with this recipe. It is healthy, simple and very tasty!

1 cup of 100% whole wheat flour
1/2 cup of white sugar (natural)
1/2 cup of packed light brown sugar (natural)
1 tsp. of baking soda
1/2 tsp. of sea salt
1 tsp. of cinnamon
2 eggs (organic if you can)
1 cup of melted butter (yes butter the one thing you're going to have that isn't super healthy)
2 1/2 cups of quick oats

Optional: cup of raisins or dried cranberries

1. melt the butter
2. mix the flour, sugar, baking soda, salt and cinnamon together
3. add in the eggs and melted butter and mix well and then add in the oatmeal and raisins/cranberries
4. cover tightly and refrigerate for 1-3 hours
5. Preheat oven to 350*
6. flatten the dough and shape into 2 inch balls or use a cookie cutter to cut them (that's more fun!)
7. place on a baking sheet and bake for 13 minutes. Let cool for 20 minutes

Serve and Enjoy!!

Thanksgiving Glazed Pumpkin Cookies

I hope everyone has a wonderful Thanksgiving. I wanted (desperately!!) to do a Thanksgiving post but I was so busy cooking that there just wasn't time. So I decided to share one very yummy recipe. I know most people have pumpkin pie at their table but to me, that's just boring. Everyone does pumpkin pie, right? That's why I make pumpkin glazed cookies. They're absolutely delicious, I promise. (Disclaimer: Some of it is not so "healthie" but it is Thanksgiving after all and you have to live a little, right?) Here is my amazing recipe:

Thanksgiving Glazed Pumpkin Cookies
Ingredients
2 1/2 cups of whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 ts. ground netmeg
1/2 tsp. ground cloves
1/2 tsp. salt
1/2 cup I Can't Believe It's Not Butter
1 1/4 cup of white sugar
1/4 cup of Splenda
12 oz. canned pumpkin puree
2 large organic eggs
1 tsp. PURE vanilla extract
3/4 c. semi sweet chocolate chips (not healthy foodie)

Glaze (also not healthie foodie)
2 tbsp. butter
1/2 tsp. vanilla
1 c. powdered sugar
2 tbsp. fat free organic milk

1. preheat oven to 350
2. mix all the dry ingredients together: whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, cloves, salt, white sugar, splenda
3. then add in the  I Can't Believe It's Not Butter, eggs, vanilla and pumpkin puree
4. mix well and add in semi sweet chips
5. grease a pan and with a spoon- spoon out the cookie dough onto baking dish- leave about 1 1/2 inches between each cookie
6. bake for 15-20 minutes or until a toothpick comes out clean
7. let cool (about 1 hour to be safe)
8. melt the butter and add in the confectionery sugar, vanilla and milk
9 mix and drizzle over the cookies. Let stand for about 30 minutes and serve

Note: You can always make the cookies the day before but makes sure you drizzle the glaze the day you plan to serve.

Ice Cream Sandwiches- Homemade!!

So I remember the first time I made this. I was hesitant and thought what's the big deal it's just an ice cream sandwich, right? Well no! Homemade ice cream sandwiches are better than purchased ones. I promise you that you will love these and once you finish it you'll be glad there are more. :)

1 pint of frozen vanilla yogurt (Turkey Hill is healthiest)
1/2 cup semi sweet milk chocolate chips or sprinkles- or nuts which is healthiest b/c of the protein
Cookies (you will need 16)
1 Large Egg
5 tbsp. vegetable oil
5 tbsp. water
Here are the choices I suggest are best:
Duncan Hines Chocolate Chip Mix
Duncan Hines Peanut Butter Mix
Duncan Hines Oatmeal Mix

1. Preheat oven to 350*
2. In a large bowl combine the egg, oil, water and cookie mix
3. Form them into medium sized cookies (as the box will explain)
4. Bake for 10-12 minutes. (while it is cooking and cooling take out the ice cream and let it soften)
5. Let cool completely- takes about 20 minutes
6. Scoop one scoop of ice cream onto one of the cookies and flatten it out. Then place another cookie covering the ice cream forming a sandwich
7. Pour over the semi sweet chocolate chips or sprinkles onto a plate and roll the sandwich over the chips/sprinkles until it covers the ice cream leaving a few spaces of white.
8. Wrap in saran wrap and put in freezer for at least 3 hours.
Eat right out of freezer. This summer treat is guaranteed to lift up any mood!

Nutella Cookies

Nutella Cookies
So I was at home feeling bored and trying to think of what to do. I wanted to bake something - but what?
I know my mom loves Nutella and that is when I thought of baking Nutella cookies. I looked up a peanut butter recipe that looked amazing and just substituted Nutella for peanut butter and the cookies came out amazing! Here's the recipe:

1/2 cup sugar
1/2 cup packed light brown sugar
1/2 cup of butter- melted
1/2 cup of Nutella
1 large egg
1 1/4 cup flour (I used whole wheat)
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup crushed cashews- optional

1. Melt the butter
2. Mix the sugar, brown sugar, flour, baking soda, baking powder and salt
3. Add 1 egg, melted butter to the flour mixture
4. Then add in the Nutella
5. Mix well- cover and put in fridge for 1 hour

Preheat oven to 300*

6. Add in cashews
7. Lightly grease a pan
8. Form 2 inch size balls and place down on pan and the flatten
9. Bake in the oven for 20-25 minutes

Let stand for 15-25 minutes.
Enjoy!
