Man Sandwich - Healthy Way

So I know everyone has heard of the "Manwhich", but normally a "Manwich" is really not that healthy and not good your liver, colon or weight. However, my "Manwich" which I have changed to Man Sandwich is healthy and is good for your body and overall health...but it still is filling and probably will not leave room for any dessert....LOL

Man Sandwich

1 whole wheat pita
hummus
2 slices of thinly sliced mozzarella low fat cheese
2 slices of tomato
2 slices of red onion
3 slices of avocado
1 Morning Star Soy Fake Chicken Patty
squeeze of lemon juice




1. spread a generous amount of hummus inside the pita pocket
2. melt the 2 slices of cheese on the burger and then carefully place inside pita pocket
3. add in the avocado slices, tomato slices and red onion slices
4. squirt in the lemon

Eat Up!!


Optional - Add some soy chips or blue corn chips on the side.

New Year's Eve Menu

Happy New Year's Eve! It's 2014 for only one more day. On this day I'd like to take a moment and look back at all the wonderful recipes I've posted. I hope you enjoyed them. Do you have a favorite?

For New Year's Eve I've decided to post a menu of what you can serve at your party.

Appetizer
Serve both these items with whole grain chips or crackers
Spinach and Cheese Dip (Serves 4)

1 cup of low fat olive oil enhance mayo
2 spoon fulls of regular cream cheese
1/2 tsp. onion powder
1/4 tsp. garlic powder
squirt of lemon juice
1 8 oz. package of frozen spinach (drained well)

Mix the mayo, spices, lemon and cream cheese well and then add in the spinach and mix on high with a handheld blender.

Easy Crab Bite Dip (Serves 6)

3 cups of imitation shrimp - shredded. 1/2 cup of mayo, 2 tbsp. Parmesan cheese, onion salt and garlic powder to taste. Mix well. Add shredded mozzarella sheet evenly and lightly over it.

Bake in oven at 250 for ten minimizes


Main Food

Mini Subs (Serves 10-15)

Tuna with Swiss
Egg Salad with Lettuce and Tomato
Cheese, Tomato and Basil

Buy 3 loaves of Italian bread (1 foot each) make 3 large subs.
Tuna - 3 cans of tuna, mayo, 6 slices of swiss, onion and tomato

Egg Salad - 6 eggs, mayo, romaine lettuce, tomato

Cheese - sliced mozzarella, tomato slices, fresh basil slices, red wine vinegar and olive oil

Cut each sub into five sandwiches









Snack Foods

Just buy popcorn, pretzels, nuts and ice cream


Popcorn - melt caramel and pour over the pop corn - place in fridge for 20 minutes- Remove & Serve

Pretzels - melt chocolate and pour over pretzels - add multi color sprinkles. - Place in fridge for at least 1 hour - Remove and Serve

Ice Cream - random flavors for whoever wants! (My parents like to eat ice cream on New Year's)

Pesto Grilled Cheese Sandwich

I made this tonight and my dad's first reaction was "is this on your blog? because it needs to be, it's the best you've ever made". My mom conquered. So I thought okay- I'll add it. It is quite simple to make and very healthy. It is important you make it this way because my method is what keeps it pure and healthy.

Pesto Grilled Cheese Sandwich

6 slices of 100% whole wheat gluten free bread
1 cup of fresh basil leaves
1/2 cup of extra virgin olive oil
1/4 tsp. garlic salt
6 slices of onion
3 slices of muenster cheese
3 slices of swiss cheese
3 slices of mozzarella cheese
3 tbsp. of unsalted butter

1. put the basil leaves and olive oil in a blender and blend it then add in the garlic salt and mix
2. lightly spread the butter on each side of the bread and then place down on Pam sprayed pan
3. carefully spread the pesto sauce on the bread and then carefully place 1 slice of each kind of cheese on the bread
4. place 2 slices of onion on each slice and then put the other slice of bread on top
5. grill each side for about 2-4 minutes flipping it occasionally until it is nice and brown

(makes 3 sandwiches)

Grilled Mushroom Sandwich with Swiss Cheese, Tomato and Oregano

This recipe has my dad written all over it and the reason why I choose to post it today is because today is Father's Day!! So "Happy Father's Day" to all the dads out there! This recipe is light and tasty and will for sure put a smile on your dad's face.

4 Slices of Whole Wheat Bread
4 Slices of Tomato
4 Slices (or 2 large) of Swiss Cheese
1 8oz. canned mushrooms
Oregano
Pam Spray

1. spray the pan with pam
2. place 2 slices of whole wheat bread on the pan
3. place the swiss cheese, 2 slices of tomato, 3 tbsp. of mushrooms, 1 slice of swiss and oregano
4. then place the other slice of bread down on top of the cheese, mushroom and tomato.
5. cook on each side for 5 minutes and serve up!

Delicious!

Princeton Cafe Sandwich

Okay so I when I made this the first thing that came out of my mother's mouth was: "I feel like I'm at a cafe in downtown Princeton". That was when I decided to name this sandwich the Princeton Cafe Sandwich. It is elegant, simple, tasty and of course healthy.

Princeton Cafe Sandwich

4 slices of Arnold select 70 calorie per slice bread
4 slices of low fat mozzarella cheese
spinach (from the bag in the salad aisle) - about 2 handfuls
dash of garlic powder
dash of dried oregano
dash of dried basil
4 slices of beef steak (they're the best!) tomatoes
1 tbsp. of butter

1. spread 1 tbsp. equally distributed among the four slices of bread - each on only 1 side
2. spray your pan with Pam and preheat it for about 1 minute
3. in a convection oven put the 4 slices of tomato on high for about 2-3 minutes
3. lay 2 slices of bread butter side down
4. place 1 slice of cheese on each piece of bread
5. then place 2 slices of tomatoes on each slice of bread
6. sprinkle the tomato with the garlic, oregano and basil
7. then take a handful of the spinach and place that on top of the tomato
8. place the 2nd slice of cheese on top of the spinach and then take the bread (butter side UP) and place that on the cheese.
9. press down hard with your spatula - cook for 3 minutes and then turn over and cook another 3 minutes. Turn the sandwich over again 2-3 times until the bread looks nice and toasty brown.
Serve and Eat Up!!

Triple Decker Grilled Cheese Sandwiches

Tonight's dinner is all about the sandwich! This past week on ABC's show The Taste was all about sandwiches. The challenge was to create a sandwich and the first thing I thought was "if I was there I'd win, hands down"! LOL. I like to pride myself is simple and healthy but very tasty. This one is packed with protein and calcium so if you're feeding little kids this is perfect. Cheese tends to get a bad reputation but because of it's fat content but if you eat it in moderation then there is nothing wrong with it. Here's the recipe:




Triple Decker Grilled Cheese Sandwich
4 slices of Arnold's whole wheat bread
3 slices of swiss cheese
3 slices of mozzarella cheese
3 slices of cheddar cheese

*optional - fresh basil

1. spray a pan with Pam
2. lay one slice of bread down and place each slice of cheese of top
3. then if you want lay 2 slices of fresh basil
4. play the next slice of bread on top- cook each side for 3 minutes
Repeat for second sandwich

Italian Pizza Sandwiches

This recipe I found when I was pinning. I'm sure you all know pinterest. I love it and I love to pin recipes! As soon I saw this one I knew this was healthie foodie worthy. The moistness of the bread and the hot melted cheese with just melt in your mouth and for sure only leave you wanting more.

Italian Pizza Sandwiches
1 package of shredded low fat mozzarella cheese
handful of fresh basil (rinsed)
1 plum tomato
1/2 loaf of fresh baked olive oil bread from bakery (save the rest for a rainy day of wine and cheese)
garlic salt

1. cut bread into 1 1/2 inch thick slices
2. lay bread out across a baking dish
3. rip the basil apart creating small peices
4. wash and slice the tomatoes and put in oven to dry for 10 minutes
5. once the tomatoes are done sprinkle some of the cheese on top of each slice of bread
6. then lay a slice of tomato on each slice of bread and a tbsp. of the chopped basil
7. sprinkle with the remaining cheese and sprinkle with garlic salt
8. bake in a preheated oven at 400* until cheese starts to melt (about 5-7 minutes)

Bacon Grilled Cheese Sandwich

Okay so I know what you are thinking - bacon? Healthy? Is that even possible. My answer is NO. Bacon is high in fat and cholesterol. Does it have protein in it? Yes, but not enough to count as a protein serving. However healthy people or people trying to get healthier still want to be able to eat bacon, right? And those of us (including myself) who don't eat bacon or any kind of pig want to eat it also. The question is what can we do? How can we have our bacon and still be healthy and keep to our dietary or religious needs. The answer is: soy bacon. Each strip of soy bacon has 30 calories and 2 grams of fat. Real bacon has 50 calories in a slice and 5 grams of fat. So while you aren't saving that many calories, every calories helps and each slice has 1 gram of saturated fat and soy bacon has less than half a gram in each. This alternative recipe will be a sure hit for you, your family and your waist line.

Bacon Grilled Cheese Sandwiches
4 slices of soy bacon (Morning Star Farms is good)
4 slices of tomato
4 slices of cheese (American is ideal)

4 slices of whole wheat bread
1 tbsp. I Can't Believe It's Not Butter



1. cook the bacon in the microwave for 1 1/2 - 2 minutes
2. melt the butter in a pan and the place the bread down
3. break each bacon in half and place down on the bread, the add 2 slices of cheese and 2 slices of tomato and 1 slice of lettuce
4. spread the bread with the mayo and then put the mayo side down on top of the lettuce.
5. cook on each side for 3 minutes and flip over until it is lightly browned and toasty looking on each side.

Serve and Enjoy!!

Grilled Avocado Melts

If you like avocado then I promise you will like this. Avocados sometimes get a bad rap because they are high in fat but the fat from an avocado is healthy for you, the fat from ice cream not so much. Avocado have 18 essential amino acids, high in vitamin C and E and can lead to a healthy heart. Okay so enough with the health lesson let's get down to recipe, right?!

Grilled Avocado Melts

1 large avocado
dash of salt
dash of pepper
1/4 tsp. lemon juice
4 slices of whole wheat bread
2 thick slices of tomato
4 slices of sliced mozzarella or munster cheee
1 tbsp. of unsalted butter


1. mash the avocado and add in salt, pepper and lemon juice
2. lightly butter one side of each slice of bread
3. place 2 slices of bread (butter side down) on a preheated skillet
4. carefully spread the avocado on the bread with a spatula [remember the stove top is hot]
5. then carefully place the tomato down on each bread, on top of the avocado mush
6. then place 2 slices of cheese down and then top it with the other piece of bread (butter side facing up this time).
7. with the spatula push the bread down as you would if you were making a grilled cheese sandwich. After about 3 minutes flip the sandwich over and repeat with the other side for 3 minutes. Then flip a few times making sure each side is lightly browned and then serve each sandwich on 2 plates. 
Serve each grilled sandwich on a plate and enjoy!

Yummy and healthy- Each sandwich has about 380 calories.

Cheese Burger, Fries and Milk Shake Please...oh no!

Well I've never actually ate this nor would I eat my version of it but from what I hear a cheese burger with fries and a milk shake is like heave. If you grew up in the 50's , 60's or 70's I'm sure you have one these once in your life and if you haven't I am sure you have dreamed about it. Remember in the movie Grease when all they really eat their hangs out are milkshakes and burgers? Yum! Well it does not take a rocket scientist to realize that this combo is not exactly going to lower your cholesterol. But still why shouldn't we be able to indulge a little? Well I am not going to give you permission to indulge completely but at least a little bit. Here is an amazing recipe to have your cheese burger, fries and milkshake and eat it too!!





Morning Star Original Burgers - a normal burger has between 250-300 calories. This only has 130 calories!

1 Slice of of low fat cheese- between 60-100 calories!

Whole Wheat Bun- the normal bun you get has 160 calories and enriched flour (which may sound healthy but it is actually so bad for you) a whole wheat bun has only 120 calories.

French Fries- just buy the kind in the store and reheat it without any oil!

1. Cook burger according to directions (meanwhile heat up the fries)
2. Place the slice of cheese on the hot bun and let it melt just a little
3. Place one bun on the whole wheat bun 
4. Serve on a plate with side of fries

Milk Shake
1 cup of vanilla frozen yogurt
1/2 cup of  low fat milk
2 tbsp. chocolate syrup

Pour all ingredients into a blender and blend on high for about 2-3 minutes or until nice and creamy.

Eat with Burger and Fries

Total Calories Healthy Version: 800 calories
Total Calories of Unhealthy Version: 1100 calories        

You just saved 300 calories!
