Chicken with Lemon

This is a wonderful dish to make for any event. Shabbos, Christmas - whatever you celebrate, it will meet your needs!


Chicken with Lemon
4 boneless chicken breast
2 tbsp. of olive oil
1 tbsp. cilantro
4 cloves of garlic
1 lemon
1 tbsp. honey


1. clean chicken breast
2. mix olive oil with cilantro and garlic and the juice of half of the lemon- then use the zest from the skin of the half you took the juice from to mix in (just a little zest, you've got to feel it with how much)
3. mix it well and then brush it on the chicken breast
4. in a non stick pan - cook on the chicken for about 5 minutes on each side
5. then brush with honey
6. slice the lemon and garnish it with the chicken so people can squeeze a little more for flavor

Spring Fling Salmon

This is an amazing, light and healthy salmon. It's perfect for spring time. You're mouth will love, your stomach will love it and best....your waist will love it too!!

Spring Fling Salmon
4 pieces of salmon
1 mango
2 tbsp. cilantro
1 small purple onion
1 small red pepper
1 tbsp. lime juice
1 tbsp. honey mixed with 1 tsp. brown sugar

1. wash the salmon
2. marinate it in a honey & brown sugar between 30 minutes to 2 hours (ideally 1 hour)
3. chop the mango, cilantro, onion, red pepper and mix it with lime - set aside
4. grill the salmon and then remove - serve it with the mango salsa

It's best when served over a bed of rice of noodles.

Man Sandwich - Healthy Way

So I know everyone has heard of the "Manwhich", but normally a "Manwich" is really not that healthy and not good your liver, colon or weight. However, my "Manwich" which I have changed to Man Sandwich is healthy and is good for your body and overall health...but it still is filling and probably will not leave room for any dessert....LOL

Man Sandwich

1 whole wheat pita
hummus
2 slices of thinly sliced mozzarella low fat cheese
2 slices of tomato
2 slices of red onion
3 slices of avocado
1 Morning Star Soy Fake Chicken Patty
squeeze of lemon juice




1. spread a generous amount of hummus inside the pita pocket
2. melt the 2 slices of cheese on the burger and then carefully place inside pita pocket
3. add in the avocado slices, tomato slices and red onion slices
4. squirt in the lemon

Eat Up!!


Optional - Add some soy chips or blue corn chips on the side.

Summer Squash Casserole

This recipe is a super healthy and super easy one. I know you will love it!!


Summer Squash Casserole

4 cups of sliced yellow squash - mashed
1/2 cup of chopped onion
1 cup cheddar cheese
2 eggs beaten
3/4 c. soy milk
1/4 c. melted butter
salt
35 round crackers - crushed

Preheat oven to 400

1. Mix the mashed squash with the chopped onion
2. add the crushed crackers and cheddar cheese, eggs and milk and butter together and mix well
3. then add the squash/onion mixture and cracker/cheese mixture together
4. spread evenly on a baking dish
5. sprinkle salt over it

Bake in oven for 30 minutes at 400

Baked Potato Soup

This is a wonderful soup that will leave all your guest, family and friends full and happy. It's really easy and perfect dish to serve if you want to keep it simple.

Baked Potato Soup
6 white potatoes - peeled and cubed
28 oz. vegetable broth
1 tsp. of onion powder
1 celery stalk
splash of milk
bacon bits
cheddar cheese
monterary jack cheese
green scallions
cooked broccoli florets


1. peel the potatoes and cut into chunks
2. wash and chop celery
3. put celery, potatoes and onion powder and veg. broth into pot
4. bring to boil - lower flame and simmer for 25 minutes
5. puree it. pour back into bowl and splash of milk
6. serve in bowl with a choice of the toppings!

You can allow your guests to choose what they want on top of their soup and what they don't want. It's almost like making an omelet but with soup! Choose your fillings or choose your toppings!

Fish Tacos

This recipe may seem daunting and hard but I promise you that if you just take a deep breath and relax and focus on the task at hand you will find that it is actually very, very easy.

Fish Tacos
1 package of frozen fish fillets (I recommend tilapia) - defrost
flour
2 eggs lightly beaten
1 tbps. of melted butter
whole wheat bread crumbs mixed with parmesan cheese, chili powder, paprika and onion powder
lettuce
slices of tomatoes cut into fourths
slices of purple onion
shredded cheddar and mozzarella mixture (Mexican Blend)

Melt butter on frying pan
1. Pat the fish in the flour well.
2. then dip each piece of fish into the egg and make sure the whole piece is covered in egg
3. coat it with the bread crumb and spice mixture
4. place fish into pan and fry each side for 3-4 minutes

Repeat until all fish is done.

Place the fish on a paper towel.

Place your hard tacos on a plate. Then put the fish, about 5 of the fourths in each taco, a few slices of lettuce, purple onion and about palm size of cheese. Then put a dollop of any condiment you'd like.
(Ranch, Thousand Island, French, Sour Cream, Mayo)

Serve!

Sweet Potato French Fries

Let's face it everyone loves french fries! If you tell me you don't then you are lying. The best kind I think we can all agree is the golden arches famous fries AKA McDonald's. Ray Crock the founder of McDonald's was famous for his fries back in the day and even today all fast food restaurant chains are compared to greasy, crispy, thin, melt in your mouth, mouth watering high calorie but delicious beyond delicious french fries. This recipe I have created is almost as good as McDonald's. I say almost because even I know that nothing will ever compare to their's LOL

Sweet Potato French Fries
6 large sweet potatoes (I normally say that 1 potato feeds 2 people).
olive oil
cinnamon
salt
pepper
paprika
cumin
onion powder

1. Slice of the potatoes into thin - 2 inch - strips
2. pour oil over it
3. mix all spices together then pour fries in a bag and spices in as well.
4. mix it well. allow it to marinate it the oil and spices for a few hours mixing and rubbing every 30 minutes
5. pour olive oil into a pot and heat it up. place one fry in at  a time. THIS IS ESSENTIAL or it will clamp together. Remove once the fries turn golden brown. Pat hard with a towel removing all excess grease and unwanted fat and calories.

Serve with your favorite dipping sauce.

Hawaiian Chicken Kabobs

Eating outside is fun and this a fun dish you can easily make outside as well as eat outside with your family. It is super healthy and super tasty. I promise you that everyone in the family will devour it!

Hawaiian Chicken Kabobs
2 - 4 large boneless chicken breast
2 tbsp soy sauce
2 tbsp olive oil
1 clove of crushed garlic
1/4 tsp. dried ginger

1 pineapple cut up
2 green peppers
1 large red onion

1. In a bowl marinate the chicken in soy sauce, oil, ginger and garlic for 2 hours or overnight. The longer the better
2. preheat the grill and then put the chicken on the grill - for about 7 or 8 minutes on each side
3. the cut the pepper, pineapple and onions and throw in on the grill for about 5 minutes - or until lightly browned.
4. allow all food to cool long enough for you to be able to touch it.
5. then place then on the skewers alternating between each food.


Preheat oven to 350

place skewers in oven for 5 minutes to reheat. The serve! Delicious!

Artichoke and Pasta Bake



Artichoke and Pasta Bake
1 pound of penne whole wheat pasta
1 jar of artichokes
1 onion
2 tbsp. of olive oil
1 cup of crushed fetta
Basil - optional

1. boil the water and then cook pasta for 6 minutes

Mean while, diced to onion and saute it in the olive oil
Preheat oven to 350

2. once the pasta is done drain and add the onions to the pasta and stir well.
3. add in the artichokes - slice them
4. add in the fetta and basil
5. pour into baking dish and bake for 25 minutes

Serve and Enjoy!

Tomato Salmon

This recipe is delicious. If you love salmon then you will LOVE this. If you love tomatoes then you will LOVE this. If you don't like tomatoes or salmon you will LOVE this. Basically, no matter what you will LOVE this recipe.

2 pieces of salmon
1 large tomato - diced
1/4 tsp. oregano
1 clove of garlic
1/4 tsp. salt
1/2 onion - chopped
1/2 pound of Penne (half a box)
marinara sauce
Parmesan cheese
lemon juice
olive oil

1. punch the salmon with a fork and pour a little bit of olive oil and lemon juice and some salt on top of the salmon. Bake for 25 minutes

Meanwhile - boil water and pour in pasta. allow it to cook for 10 minutes.

Meanwhile - dice the onions and tomatoes and crush the garlic. Pour the garlic, tomatoes and onions into a pan and cook in olive oil until its translucent.

Once the pasta is done mix in some marinara sauce and Parmesan.

Place the pasta in a bowl place the salmon on top and then pour your tomato, onion and garlic mixture on top. Sprinkle with oregano.

Serve! Yum!

Pastrami Stuffed Chicken Breast

So this is what I call my "Wedding Recipe" because I picture it being served at a wedding. It's a fairly simple recipe, although it does take prepping time and marination time. If you're hosting a dinner party or a wedding I highly recommending serving it.

Pastrami Stuffed Chicken Breast
6 slices of chicken breast - you'll want to pound and pat it to make sure it's flat and thin
12 slices of pastrami from the deli
Zesty Italian Dressing
seasoned whole wheat bread crumbs (what I normally do is get whole wheat crumbs and then add spices myself- onion powder, dried parsley, paprika, garlic salt, pepper, cumin etc.)



1. marinate the chicken breast in salad dressing over night
Preheat oven to 350
2. lay out each chicken breast flat and then top each one with 2 slices of pastrami
3. roll it tight and then roll the chicken/pastrami roll in your bread crumbs. The crumbs will stick because of the wet dressing - it replaces the egg.
4. place down on a baking sheet or pan and bake at 350 for 30 minutes

That's it! I suggest serving it with marinated sweetened sweet potatoes or rice. For rice - just cook according to directions on box. For sweet potatoes, wash the potatoes, dice them and coat them in brown sugar, canola oil and cinnamon for a couple hours. Then spread evenly on baking sheet and pour marination over it. Bake at 450 for 50 minutes, stirring occasionally
.

Creamy Spinach Soup

So I was thinking for weeks about a new possible soup recipe. As many of you know I pride myself on creating unique and delicious soups. I get inspired from posts I see on other blogs, pinterest and cook books to make my own. This one was a long time coming. I thought, I searched, I pinned and finally I came up with the most amazing spinach soup recipe. I promise you will love it and feel so good after eating it.

Creamy Spinach Soup

4 small white potatoes
3 celery stalks
1 tsp. olive oil
Vegetable Broth
handful of fresh spinach chopped
1 clove of garlic or 1/4 tsp. garlic powder
1/2 tsp. onion powder
dash of pepper/salt
splash of milk
handful of shredded cheese

1. cut the celery and potatoes and brown it in oil for 3 minutes
2. add in broth to just cover the potatoes and simmer for 20-30 minutes
3. add in handful of chopped spinach
4. puree it
5. add in milk, spices and cheese - stir

That's it! Enjoy! Yummy!

Best served with crackers, rice cakes or bread.

Classic Italiano Pasta

Mama Mia! In this post I am featuring a classic pasta dish. It was bring your heart and soul right into Italy and will make you feel like you're actually in Venice, Italy. This pasta recipe is so savory and so divine it will leave you only wanting more.

Classic Italiano Pasta
1 pound of penne pasta
dash of salt
1 clove of garlic
1 tbsp. of olive oil
2 cups of your Marinara sauce
white wine
Parmesan cheese
Fresh basil

garlic bread and red wine

1. boil the water - once the water is boiling add the box of pasta- add a dash of salt
2. while it is boiling - crush your garlic clove and cook it in the olive oil.
3. allow the pasta to boil for 10 minutes - the drain it a few times making sure all the water has been drained out
4. add in the olive oil/garlic mixture and stir
5. add in your sauce and stir well - bring flame low and then add in some white wine - I don't have a measurement I basically just go as I feel. But I'd say about 3-4 tbsp. Stir together
6. Bring flame high and stir - DON'T LEAVE THE STOVE
7. Once it's simmering hot, place into bowls and sprinkle a generous amount of Parmesan cheese and little bit of fresh basil to garnish

Serve with a glass of RED wine, and garlic bread!

Zucchini Pancakes

So this a really easy recipe. I made this for Chanukah this year but never got around to posting it. It is a twist on the traditional latkehs.

Zucchini Pancakes
2 large zucchinis
1 egg
1/4 c. whole wheat flour
1/4 tsp. onion powder
1/4 tsp. garlic powder
1 tbsp. Parmesan cheese
1/2 tsp. paprika
1/2 tsp. cumin
olive oil for frying

Dressing
1/2 cup of low fat mayo, 1 tbsp. Parmesan cheese, scoop of regular cream cheese, 1/2 tsp. onion powder, dash of garlic powder, lemon juice

1. Shred the zucchinis - add in the egg
2. mix the flour and seasonings together
3. then mix the zucchinis, egg with dry mixture
4. heat skillet with oil - form zucchinis with your hands into little pancakes
5. fry on each side for about 3-5 minutes, flipping occasionally

Dressing - mix all the ingredients together and serve on top of zucchini pancakes

Alabama Chicken Casserole

Here's to good old southern food! If it aint fried then it aint good, but if it is fried then it aint good for you. Here is a good alternative to good southern food.

Fried Chicken Casserole
2 tbsp. of whole wheat flour
1/4 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper
2 eggs
2 chicken breast
1/2 bag of frozen corn or 15 oz
1 small tomato
2 green onions
2 tbsp. chili sauce
1/2 pound of whole wheat pasta

1. pat the chicken flat
2. pat in in flour
3. soak it in egg
4. then take 2 tbsp. flour, paprika, salt, garlic powder and pepper and mix it together
5. coat the chicken in the mixture
6. fry in olive oil for about 8 minutes on each side
7. cook the pasta al denta - drain it
8. mix the frozen corn, pasta and chili sauce and chopped tomatoes and green onions together
9. bake it at 350 for 50 minutes

Serve w/ the fried chicken! Delicious!

Veggie Lasagna Rolls

This is a new recipe of mine. But I promise you it is a good one. 

Veggie Lasagna Rolls

1/2 package of whole lasagna 
1/2 jar of marinara sauce
8 oz package of pizza cheese
1 egg
1 cup of low fat cottage cheese
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 cup of chopped red pepper
1/2 cup of mushrooms (canned or fresh)
1/2 cup of cook broccoli florets (done al dente)

1. cook the lasagna rolls for 7 minutes - you want them half cooked but still firm
2. beat the egg and mix in the the cottage cheese, onion powder, garlic powder and vegetables
3. add it 1/2 package of cheese and mix it well
4. roll out the lasagna rolls and place 1 large spoonful on the roll and then roll it somewhat tightly
5. place it in the baking pan - continue until your mixture is done
6. pour the sauce over the rolls and then sprinkle it with the remaining pizza cheese

Bake at 375 for 1 hour

Serve!!!

Apricot Baked Chicken

So I don't really remember the first time I made this but I remember one of the times I made it for a special dinner with some of dad's soccer friends. They raved about it for a while - even 3 years later they still talk about "Loni's apricot chicken"

Simple and Yummy - I promise!!

Apricot Baked Chicken
8 chicken thighs
1 cup of apricot jelly
3/4 cup of Russian dressing
1/4 tsp. onion powder

Mix all ingredients together. Pour over chicken and bake it at 350 for 1 hour and 25 minutes.

That's it!!

Parmesan Fried Tilapia

So normally when I make these fried dishes I use bread crumbs, but it got me thinking why use bread crumbs? They're more filling and they add extra unwanted calories. Don't get me wrong, I still think there is a time and place for bread crumbs (when making patties, you MUST use them). But if you plan to fry something - skip the bread crumbs and make your own delicious mixture.

Parmesan Fried Tilapia
1 package of tilapia (normally there are about 5-6 thin pieces of it)
1 egg
handful of whole wheat flour
3 tbsp. Parmesan cheese
I mix cumin, paprika, garlic, onion, oregano all together - but you can make your own.
Oil - for frying

1. wash the fish and then coat it with the flour
2. drain in in the egg
3. then evenly coat the fish with your mixture
4. fry it for about 6 minutes on each side

Serve!!

Salmon with Cream Sauce and Garlic String Beans

I've only made this recipe twice, but I think my family wishes I had made it ten times! They love it. As my dad would say "I need to eat it slow so it can last longer". My mom says "please hand me the tin foil so I can scrape every last bit of it". I say "let's just make it again!" Either way - you will for sure love it (and so will your pants- they won't go up at all!) The healthiefoodie will deliver again.

Salmon with Cream Sauce and Garlic String Beans

This serves 2:

handful of fresh string beans - washed and chop off the ends
garlic powder
olive oil

2 pieces of 4 oz. salmons
1/2 cup of sour cream
1 tbsp. grated Parmesan cheese
1/4 tsp. garlic powder

1/4 tsp. onion powder
1/2 tbsp. veg. oil
1 tbsp. low fat mayo
squirt of lemon juice
dried parsley

String Beans
Put the string in a pot of water - make sure the water just covers the string beans. add about tsp. of olive oil and sprinkle a generous amount of garlic powder. Cook for 25 minutes uncovered - stir occasionally.

Salmon
Clean the salmon and pat dry.

1. mix sour cream, veg oil, mayo, lemon juice, garlic, onion and Parmesan and put in a container
2. then put salmon in the container and allow it to marinate for 30-60 minutes

Preheat oven to 350 - sprinkle parsley
Cook for 30 minutes.

Serve together and enjoy!

Spinach Macaroni and Cheese

So everyone loves macaroni and cheese. Some like it from the box and some like homemade and some like both ways. But everyone also knows that as tasty as macaroni and cheese it, it isn't exactly good for your waistline. Furthermore, when you eat this wonderful stuff you sure don't stop at one serving which then makes it even worse! Which is why I have developed a healthy way to make macaroni and cheese with a little twist - I call it the spinach twist!

Spinach Macaroni and Cheese

1 box of whole wheat macaroni (elbows is best but really any kind of pasta will do)
1 package or bag of fresh spinach
1 1/2 tbsp. olive oil
1/2 tsp. onion salt
1/2 tsp. garlic salt
2 cup of milks
2 packages of cheddar shredded cheese
1/2 onion
salt/pepper

1. boil the water, once it comes to a boil add in the pasta and cook it for 7 minutes

Meanwhile-
2. break of the spinach and take off the ends and put into a blender
3. add the olive oil and puree it. then pour into bowl and add onion and garlic salt and stir - set aside.

4. drain the pasta and then mix cheese and 1/2 cup of milk with the noodles. then add the spinach puree sauce.
5. pour into a deep baking dish and pour in the rest of the milk until the milk is half way up the dish. slice up some onions and put on top and then sprinkle it with salt and pepper

Bake for 50 minutes.

Serve and Yum!
